A watermelon mimosa is the best way to celebrate this summer! Add a fresh, vibrant summertime spin on a classic prosecco mimosa with this easy upgrade. This watermelon mimosa is so simple to make, and perfect for celebrating in style. Make them for brunches, showers and so much more!
Mimosas are light and refreshing with any type of juice – but when I added my homemade watermelon juice, magic happened! This watermelon mimosa is sweet but balanced, with the perfect amount of bubbles. It’s such a great way to celebrate with friends and family.

Shopping List
- Prosecco (Or your favorite Champagne or sparkling wine)
- Watermelon Juice (Fresh watermelon juice is best)
Variations
- Serve blended for a frozen watermelon mimosa – just toss ingredients with a cup of ice into blender!

Tips
- Make a Pitcher – Use the sliding bar for servings in the printable recipe card to automatically multiply each ingredient!
- Quality Prosecco shines here, but don’t go overboard. Much of the nuance of bubbly bottles is lost to the fresh juice!
- Any Type of Bubbles – Choose your favorite! Champagne is French and Prosecco is Italian. However, another great bottle of bubbly is Cava, a dry Spanish sparkling wine.

Fill champagne glass halfway with watermelon juice. Top with chilled Champagne or Prosecco.
3 ounces Watermelon Juice, 3 ounces Prosecco

If you’d like, add a touch of orange liqueur or bitters.
½ ounce Cointreau

Garnish with a slice of fresh watermelon and/or a sprig of mint. Enjoy immediately.

Storage Notes
- At Room Temperature – For up to two hours before and after serving.
- Refrigerate – Make each mimosa individually so you can store the juice and Champagne individually. Champagne loses bubbles after about three days in the fridge.
- Freeze – To turn these grapefruit mimosas into a frozen slushy by freezing and blending!
