Blue Moon Ice Cream – A Beautiful Mess

I heard that Midwest Princesses are having a moment and so today’s recipe is a Midwestern classic, Blue Moon Ice Cream. Created in Milwaukee in the 1950s, this mysterious flavor of blue ice cream is a Midwestern staple. The dominant flavors are raspberry and lemon along with vanilla. Some people say it tastes like Fruity Pebbles and sometimes it’s called Smurf Ice Cream.

  • Milk – Choose any type of milk (dairy or plant based). I used skim milk. 
  • Vanilla Pudding Mix
  • Heavy Cream 
  • Raspberry Extract – Raspberry flavoring is a key element in this recipe. 
  • Lemon Extract – Lemon flavor balances the raspberry for this signature flavor.
  • Blue Food Coloring – Or natural blue coloring of your choice.

In your pint container, combine milk, vanilla pudding mix, heavy cream, raspberry extract, lemon extract and blue food coloring. Whisk to combine. Cover the pint and freeze for 24 hours.

Remove the pint and take a look at your ice cream. If you think the texture is a bit chalky (or not as creamy as you want), make a hole in the center of the ice cream and add a tablespoon of water or milk. Then, use the “re-spin” function. Repeat until texture is creamy.
