A Hugo Rosé Spritz is a delightfully bubbly and sweet way to sip this summer! It’s the perfect girl’s night spin on my classic Hugo Spritz cocktail, balancing rosé, St. Germain, mint and lime.
While a classic rosé spritz is a simple mixture of rosé and sparkling water or soda, I’ve given this cocktail the ultimate upgrade! A little touch of St-Germain is the best way to elevate this simple drink for special occasions. Sometimes, a day at the pool is the only special occasion you need – and this is the perfect sip for that kind of day, too!
When combined with a touch of fresh lime and mint leaves, my Hugo Rosé Spritz is such a memorable cocktail. I just know you’re going to love this one as much as I do – cheers!

Ingredient Notes
- St Germain – This brand is my favorite, but any elderflower liqueur will do. St. Elder is another option, and it’s a little less expensive.
- Prosecco – Choose an affordable, medium-bodied option.
- Sparkling Soda – Fever Tree is a great club soda brand, but any kind of sparkling water will work in this recipe!
- Limes – Use these for garnish and to infuse the drink itself.
- Mint – Gorgeously green, fragrant and flavorful, don’t skimp on the mint leaves!
Julie’s Tips
Choose the Perfect Bottle: Rosé can be still, semi-sparkling, or sparkling. It can range in sweetness too – with a very dry flavor profile to quite sweet.
Adjust Sweetness: If you prefer a sweeter drink, add a splash of simple syrup or use a sweeter rosé.

Prevent your screen from going dark
- Chill All Ingredients: Ensure your rosé, sparkling water, and St-Germain are well-chilled before mixing.
- Stir the mint leaves a bit with your spoon to release the oils – no need to muddle.
- For stronger mint and lime flavor, add the wedge of lime to the base of the glass with the mint leaves, and stir them together. Then, add ice and pour the ingredients over this base.
Make a Pitcher
Use a full bottle of rosé (approximately 26 ounces), 19.5 ounces (2⅓ cups) of St-Germain and top it with 24 ounces (3 cups) of club soda. Add the rosé and club soda just before serving.
Variations
- Rosé Aperol Spritz: Add a splash of Aperol for a slightly bitter, orangey twist.
- Berry Rosé Spritz: Use muddled berries (strawberries, raspberries, or blueberries) for a fruity flavor.
- Citrus Rosé Spritz: Add slices of lemon, lime, or orange for a zesty kick.
